This classic Sicilian olive oil is a favorite with the farmers and producers. Processing within 12 hours of harvest, it retains its rich color and mellow yet bold flavor with a little lingering spicy after taste. It has a heaver density than other oils with an intense green color. The fruity aroma has hints of green tomatoes and almond.

Choosing the perfect olive oil can be difficult, similar to selecting a wine.  With so many options and flavors how does one know how to select the perfect olive oil?  Well, for the most part, it is a matter of preference and taste.  However there are some key factors that play a role in determining the quality of olive oil.  For starters, it is important to look for "Cold-Pressed" on the bottle. This means that no heat or chemicals were used in the extraction process.  Adding heat to the olives during extraction causes the oil to lose nutrients.  Oil labeled “Extra Virgin Olive Oil” (EVOO) is the next thing to look for.  It is the purest form of olive oil and as a result, it is the most sought after as well.

Those benefits are real, but sometimes the "olive oil" is not. Both Consumer Reports and the University of California at Davis have tested olive oils typically found in grocery stores and restaurants, and both studies found that about 60% of the oils labeled "Extra Virgin Olive Oil" were in fact not 100% EVOO, including "olive oils" that had lower-cost soy or canola oil added to them.

Not all olive oils, even those labeled as "100% olive oil" and "Product of Italy" are the same, either, as under Italian law if you do anything to the oil in Italy it can be labeled as a product of Italy. That means some producers import cheap olive oil from Libya and other low-cost countries and simply bottle it in Italy, making it a "Product of Italy".

This olive oil was pressed and bottled on 11/10/16 and should be consumed by 11/10/18.
